I would like to make an 8 hour recording without ending up with one huge file at the end. Is it possible to use the timer to set a series of 1 hour recordings? Thanks for your help.

No, but why would you want to risk missing something in the recording by stopping and restarting? It's better to record the whole eight hours, then label each hour (CTRL + B) then File > Export Multiple.

As Gale says, but rather than manually placing the one-hour markers, use instead the Analyze > Regular Interval Labels... function

BTW make sure you've got a lot of free disc space - 8 hours of projects plus 8 hours of exported WAVs chews up an awful lot of disc space, especially if you are working at 32-bit.
