Virtual Audio cables, and multi device recording

In the Audacity preferences, I can select different devices to record from in the options, and I have a pretty list, which includes my 4 virtual audio cables. Is there any way for me to have 4 tracks going, each recording from one cable?
If not, if I have multiple instances of Audacity open, can I select different default devices in them all, without needing to mess about with NTFS junctioning? If so, is there a reliable way to synchronise starting recording on all open Audacity clients?
(This is ending up being the most convoluted solution to a simple problem I've ever encountered, by the way.)

Audacity will not run more than once at a time and it will not record from more than one "device." Generally not more than one stereo show. Audacity is a simple program.
There is a posting of ways to get Audacity to record multiple sound channels (over two). Audacity supports 16, but getting them into the computer is the trick.

Audacity can only record from one device at a time. If you have multiple instances of Audacity open only one of them can record at one time.

I don't actually have a discrete sound card at all, I only have the integrated chip on the motherboard.
I can have about 256 devices if I want, though. See the screenshot:

As has been said, Audacity can only record from one "device" at a time, however it should be able to handle as many audio channels as that device has available.
The 16 channel limit was removed quite recently.

Apologies, I was getting devices and channels mixed up.
Adobe audition can do exactly what I want, it seems, so I'll be getting that soon. Thanks for your help.

Money-based software causes all sorts of windows to open up, ASIO drivers, Fraunhofer MP3, etc, etc. All closed to Audacity because of its price tag.
