Hi,
Do to my current vision impairment it is difficult to see the blue wave on the white background. Is it possible to switch this around so it is a blue background with a white wave? Or any dark background with a light wave colour?
Any help would be appreciated.

Unfortunately the Audacity colour scheme isn't configurable in any current release. Also neither the waveform or the panel to left of it change colour if you use a high contrast operating system theme.

The best you can do is to download the old 1.3.8 Beta and use the Theme Preferences feature to save the image cache file, edit it in an image editor, then load it back into Audacity. You can only change the toolbar button colours and the waveform colours.
