Capturing sound using Headset with "What U Hear"

OS - Windows 7
Using Skype headset
Program - Audacity v1.3 Beta
Problem - Capturing sound using Headphone speakers. (NOT the microphone).
This program Audacity is pissing me off..I try selecting a device> and there is no device under recording to allow me to select my headphone speakers as the capture sound device.
I can select Headphones speakers under Playback but I cannot reverse it. Any ideas!

For all you lazy people who just read the first post here is what I posted on page two about my problem.
Look this is the wife, I have done this before.
The last time it worked there was a drop down window and I selected the Dule Mix option, it was in the main window but its not there anymore.
The last song I recorded was fake it by seether and I did it with my headset on and with out it picking sounds up from the mic. I got so frustrated when I tried to set up Audacity the first time to do this I deleted the drivers to the microphone thats built in the computer and it fixed the problem.
I want to say my problem is I can not see if my Line in is muted because the piece of trash that is windows 7 wont give me a master volume like xp does it just gives me a mixer. Its not impossible to do because I HAVE done it before.
I will edit this after I read the other posts ._. but this is what I know to have done when I had it working right, my husband made a second user on the computer and it stoped working the right way.

Its a headset, it has nothing to do with skype I dont know where my husband got the skype part from, I think its because its compatible with skype, Skype has nothing to do with this its all with Audacity. I will even take a screen shot to show you what I am talking about.
Edit Edit: Okay it seems my husband added something to Audacity which I have no clue but now the bar I am talking about is gone ._.
Anyways, what it should do is record from Stereo Mix regardless of my headset, which the headset + mic is only in so when hes recording crap from youtube at 1am I dont here it. SO Why is the stereo mix NOT working for recording sounds off the web. I dont have any interest in Total Recorder I use to use it but its BS now I like Audacity WAY better.
I want to do "What U Hear" recording to make it simple for those who STILL do not understand.
