Just use
Tracks > Add New > Stereo Track

But you shouldn't need to do that. If it's all set up correctly you should only need to press record.

OK, so did this and now its worse. When I click 'start monitroring' to set the recording levels, there's no input to measure! But when I revert back to the standard mic setting in the 'recording' tab of 'sounds', it returns, albeit in mono!
Can't understand why this is sooooooooooooooooooooooooooooooooooooooo ridiculously complicated! Goddam modern technology eh?

Well folks, I've tried everything suggested by you kind people but to no avail.
Is Audacity the only piece of software you can get (free) to record vinyl > MP3?

No, there's also Wavosaur and Kristal to name two others.
