Hi,
under preferences/devices I have selected:
Host: MME
Playback: SB Live! 24-bit External
Recording: SB Live! 24-bit External
I can record now that I found the input volume slider defaulted to zero (? silly), but it sounds like I put my speakers in a tin can...
Any tips? Does this External Creative sound have issues with Audacity? Is there anything I can do to increase the quality of my recordings?

You also need to make sure you're not playing or recording anything else. In particular, you should not have Mix-Out or What-U-Hear selected. That will give you a very serious echo effect like a very small bathroom.
There are a number of those, like recording from your USB device and the computer built-in microphone.
Turn off or disconnect everything else.
