Hi there
I have a Ion USB tuntable and the software that it ships with doen't yet support version 9 of iTunes.
Can someone please tell me if Audacity supports V9?

Your question doesn't really make sense.
ION ships its TTs with (amongst other software) Audacity 1.2.x (I would recommend upgrading, for free to 1.3.9 from http://audacityteam.org/download/
Adacity neither "supports" nor "doesn't support" iTunes. Audacity is a recording and editing tool - after a recording has been made it can be exported to a number of audio file formats: WAV (uncompressed and large), MP3 (smaller by a factor of 10 - compressed), Ogg, FLAC etc.
ITunes can import MP3 files or WAV files (if you use WAV your iPod will fill up quickly) - if you want to get tricksy you can get iTunes to convert WAV files to Apple's own AAC compressed format.
I would recommend a read of the following tutorials from the Audacity Wiki:

Maybe I should be more specific.
I bought a Ion TT, installed the software it shipped with (EZ Vinyl convertor) and it all worked fine.
Downloaded V9 of iTunes, went to record another piece of vinyl and I'm getting an error pop up saying that it requires iTunes to be loaded in order to work - so I guess it's not recognising the new version even though it is installed and working fine.
Ion suggested using audacity - hence how I got here.
What do you think would be the best fix for this problem?

I'll bet Easy Vinyl was using iTunes for MP3 conversion, or had some feature where it would export directly to your iTunes library.
