44.1, 48, and 96 kHz

Without actually answering you, I can tell you you're in the wrong Audacity. All the advanced features are in 1.3.x. Audacity 1.2 was designed and produced just after The Reformation in Europe and it's pretty basic.
Further, even if the software does support it, the hardware has to do it, too. So it's a hand-holding operation.
Whenever somebody tries to do something like this, they do run into a few interesting problems. There are radio stations just above the audio band (25000Hz) and you suddenly are able to record them all. You need to have audio cables that not only shield for audio, but for radio interference as well. Any amateur radio operator will tell you that's a whole different world.
Also, as a side issue, the noise level goes up with bandpass, so even though you have frequency response that's flat out beyond where dogs can hear, the noise will kill you long before that sound channel becomes useful.
Then there's the drive space. You have lots, I hope. When you get to extreme services like this, you quickly peel off the ability of MP3 to compress it without damage.

I was just curious.
I do have the current version and did not realize that this forum was relative to a specific version.
I think the last time I used it was 1.3.3.
I do not have access to those high end A to D converters anyway.
I would assume that they were using the converters that are manufactured in Seattle and I think they are over $12k each.
they are usually rented as they are so expensive.
There is also a new system where one would have racks with 48 200gig hard drives and this is a new live recording to hard drive system. At any rate i am well aware of the storage space issue and A/D converters.

Audacity can handle 192000Hz - probably more, but it becomes pretty irrelevant for audio recording.

that's what is next.
That is what works well for DVD's.
Al most all CD's sound pretty bad not to mention MP3's which sound terrible.
George Massenberg is doing stuff at 300,000 and that sounds closer to analog than anything so far
to each his own
on a good pair of goo speakers, monitors, or even good headsets you should be able to hear the difference pretty easily between 44.1k and 192k....big difference
It is about to double again especially when DVD2 and DVD 3 come out.
Of course it does not matter on earbuds or junk boomboxes
