Hiya.
I've just began to use Audacity with decks and a DJM 400 mixer. I have the two RCA's plugged in to the mixer and the single jack in to the headphone socket of a Mac. The version is 1.2.5 and the Mac is OS X 10.
The problem I'm having is I want to just record what I'm playing through the mixer but I hear every noise around me, myself, the click of a mouse etc. Would you know what I should do to be able to stop hearing every sound and just record and play back what I'm playing through the mixer?

Just because I'm compulsive about this, you are not plugged into the "headphone" connector. Chances are, you're plugged into the Mac Line-In which is the connector labeled the little black circle and two black arrows pointing in.
Given that, you are recording your built-in microphone, not the show from the mixer.
Apple > System Preferences > Hardware > Sound > Input. Select where you want the show to come from and close the panel. Then it's Audacity > Preferences > Audio I/O > Recording > Built In Audio. Close the panel and restart Audacity.
The actual Audacity recording panel might say something like Default Input. That's OK. Just go with it.

One other trick. You don't have to press Record in Audacity to see what the levels are. You can click once inside the red record meters and they will wake up and show you the levels.
It's one of Audacity's built-in diagnostic modes.

Nope. It was the headphone socket but thanks for the answer
It's now all sorted and I can record just off the mixer.

Which Mac?
Apple > About This Mac > More Info > Hardware > Machine Name
And what exactly did you do to fix it? Remember this is an all volunteer cast of thousands so you need to share how you fixed your problem.

Sorry I wasn't clear.
I was making the mistake initially of putting the lead in the headphone socket next to the mac Line in that you mentioned. I followed your instructions and it works fine so thanks again.
