I can assure you that with violin strings there are enormous differences between different brands and different types from the same maker. The difference is immediately apparent in the tone and there are also significant differences in "how they play". I've no idea if the variation is as significant with guitar strings, but I'm pretty sure there will be some difference - the question is whether it is measurable.
