I had a bit of a melt down with a drive but managed to recover some of the (now headerless) wav files...
When I import them as RAW files they are very hissy, any known work around?
I've tried various combo's of offset etc with no luck so far...
Please don't suggest I use the noise reduction effect!
Also, I tried using a hex editor to recover the files (but don't really understand bext chunks/riff etc),
I know how big the file is in MB and can work out the length with some simple math.
Is there an easy way of re-writing the header? ie: just overwrite a new
file length and/or specs? (Files are 24b/44.1k)
Any help appreciated...

First thing to try is Audacity 1.3.12.
If you are still unable to import correctly, is there a reasonably small file that you could make available for testing?

I'm using Audacity 1.3.12 with no luck.
The files are around 980MB so posting a sample for testing is a bit difficult...
Now I have some time on my hands I'm trying all methods of recovery, unfortunatly it looks like
most of the files are lost so far.

Did the files had that hiss before the crash?
Can you play them right with other media player (iTunes, VLC, etc)?

If the files are now headerless you've clearly not recovered all of the data. As you now have partial files, even though you may have nearly all of the file, I don't think that it's going to be possible to get the necessary off-set correct without an awful lot of trial and error. Without knowing the exact offset you will get a lot of noise in the file and I'm sorry to say that I know of no way to calculate the correct offset.
