I'm wondering if there are any good books on editing with Audacity in OS X.

There's loads of on-line documentation. See the "Tips, Tutorials and Documentation" links at top of page, or any of the links below this post.
Most of the current documentation is for Audacity 1.3.x which is much improved from the old 1.2 version.

Click on the link, then print from your browser (probably in your browser's "File" menu)
