Most efficient AIFF format

I'm trying to record from cassettes using Audacity, but I haven't been able to get even one side of one cassette recorded without Audacity freezing up, usually after about 20 minutes. I'm using Audacity 1.2 with a Mac OS X (intel), version 10.4.11 with 2 GB of memory. The settings I'm using in Audacity are for "2(stereo)," 44100 Hz, 32-bit float and AIFF/SGI 16 PCM. In the "Quality" page in Preferences, there are choices between Fast Sinc Interpolation and High-Quality Sinc Interpolation for the Real-time and High-quality sample rate converters. I don't know what these are, or if they're relevant, but my real-time SRC is set to Fast... and my High-quality SRC is set to High-quality... And speaking of quality, I'm not concerned about sound quality because these cassettes are just lectures with one person speaking. Would I have better luck using different settings?
