I'd like to be able to toggle the playback speed while I'm listening--but not by using the bar while playing, but rather by using a quick command (like raising and lowering the volume incrementally in QuickTime by using the Up and Down arrow keys). Can this be done?

Edit > Preferences > Keyboard (or where ever it is in 1.2) and see if it's available for assigning to a shortcut key. I didn't see it in 1.3 and that usually means it isn't available in earlier versions, either, but look around.

In Audacity 1.3.x
Edit menu > Preferences > Keyboard tab
Select "Command" and scroll down to the bottom of the list.
Set keyboard shortcuts for the last 2 options. (note that a lot of keys are already defined so you may need to redefine other keys.)
