Change Audacity Sound Input

When using Audacity under Windows I am able to get Audacity to take the sound output by an application as input to Audacity and record it.
On the MAC I don't seem to be able to do this. There is an input configuration screen but the only available input is the built in microphone.
Similarly in the Sound panel in System preferences the only input shown on my MacBook Air is the microphone.

How can I capture the sound output by an application as an input to another application like Audacity?

Apple don't really like you to do that, so you need to use additional software.

Or, you can do the hardware thing, too. Short jumper cable between the Line-In and the Line-Out (Headphone).

There's a perfectly valid reason Apple did that. A very large number of postings on the Windows forum have to do with people screwing up their sound. "How come I get echoes on my live recordings....?" That doesn't happen on Macs.

Change Audacity Sound Input Volume

I saw a thread here about someone's difficulty getting the input level down from the red zone. I have the opposite problem: the input level in my Audacity is stuck at zero, and when I move the slider it simply jumps instantly back to zero. What am I missing? Changing the volume in the mac control panel seems to have no effect on this problem.

Also, I got the program over a year ago and don't remember the version number. When I go to "About" to check it, "About" is greyed out. How can I be sure which version I'm using?

Help > About Audacity. And we're going to need that number.

That's where the Windows people put it.

What are you recording, from where, and how is it connected?

Which Mac, Which OS and Which Processor? Apple > About This Mac.

I'm typing on an Intel Mac Mini with Tiger (OS-X 10.4.11).
