h.264 came with QT7. QT7 isn't completely stable with anything earlier than Tiger -- 10.4.
You need to haunt the Mac help forums about how to move your iTunes. I never got that to work completely well, either. I'm not a big music listener, so it didn't make any difference.

Also, I'm wondering-- and thanks again for all your help, I'm so grateful-- what would be the point to wiping the OS since you say it's not recommended to update a 10.3.9 machine to QT 7? After I reinstall the OS, won't I be in the same spot ... i.e. I need QT 7 to be able to handle Audacity files but QT 7 is unstable on my system! Do I have that right?

Calm down. The elves that run the forum live all 'round the world. It could take up to 12 hours for someone to get back to you.
You will be installing Tiger, not Panther. There is no Panther combination that will work for you. I don't see where you told us what kind of machine you have. I have Tiger running on a G4, G5, and Intel Duo Core machines with perfect success. We were forced into the upgrade at work to deal with all the new h.264 services. LAFCPUG forum filled up with unhappy people trying to get Panther to run with QT7.
We learned from that.

Okay, I've taken a deep breath and told myself everything is going to be okay.
I looked for Tiger on the Apple site ... looks like they don't sell it anymore.
If I find a friend that has it, I'm assuming I can borrow it and install without a problem?

I don't see why not.
So you see the problem. Shortly you will be not one, not two, but three operating systems behind. Panther, Tiger, Leopard, Snow Leopard.
If you don't need to interface with all these fancy-pants sound services, you'd be good to go just where you were.
