changing record speed from 45 rpm to 78 rpm

these are instructions given in manual

,If you want to record a 78 RPM album, you can record it at 33.3 or 45 RPM and convert
it to 78 RPM in the Audacity software! After you have recorded the album, open the
Edit menu then click Select then click All. Next, open the Effect menu and choose
Change Speed. Then select the speed that you recorded at (33 or 45), as well as the
speed you would like it to be (78). Then press OK.

When I selected edit menu, hit select all, all that happen was highlighted the songs I recorded on Itunes.I'm using mac osx10.5

I can't tell where you're going with this, but your record playback and capture should be the only thing on the Audacity timeline when you execute these tools and commands. Edit > Select > All should select one whole side of the album and nothing else.

That's the good news. The bad news is playing a 78 like that is pretty awful. The needle size is different between 78 and the other two. The LP needle will scrape along the bottom of the 78 groove and cause distortion and a lot of hash and noise. Then there's the conversion itself. After the speed change, I wouldn't be surprised if the music was gutless and tinny compared to the way you remember it.

Then there's the equalization. Early 78s were recorded without benefit of RIAA standards and each one had a different acoustic personality.

Outside of that, you should be fine.
