Sorry for the newbie question but can the programme be used to slow down playback for a track? Does it matter what format the track is in? Had a look in the FAQ but couldn't find the answer.

You missed the real question. "I downloaded some music and it's playing really fast. how do I slow it down?"

Audacity will do that when it encounters a highly compressed audio file that it doesn't recognize. Convert in Switch or Super to WAV format and that will drop right into Audacity at the right speed.

Actually, no. Sorry
I play the sax and what I want to do is slow down a normal-speed recorded piece of music so that I can work out what is going on so that I can reproduce it.

You can do it in 1.2 with the Effect > Change Speed select the audio and then apply this effect .
But it's much easier to do in the Beta 1.3 version of Audacity where the developers have introduced a new toolbar called the Transcription Toolbar. This enables you to play the audio at different speeds without having to alter the audio.
