Recording WAV file in old format (8kHz, 8 Bit)

I have a telephone system and the only format for recordings is a WAV file with the following settings:
Format: CCITT u-Law
Attributes: 8.000 kHz, 8 Bit, Mono, 7 kb/sec


I am running VISTA Business and have Audacity version 1.2.6
Can I record a WAV file with the above settings in Audacity?
If not can anyone suggest what or how I can create a recording compatible with our phone system..?

On a Windows machine, "Super" or "Switch" (Google) can be used to convert a sound file to multiple other formats.
