How do i

ENABLE the mixer, in Audacity?

I disabled them, how do i turn them back on?

What mixer?
What version of Audacity do you have? (look in "Help > About Audacity")

Do you mean the "Mixer Toolbar"?
You can turn that on/off by going to the "View" menu and selecting it in the "Toolbars" section.
