I am trying to record multiple tracks. When I record my first track it's fine. It will play back fine. When I go to record a new track, the track I just recorded does not play. How do I change this? I cannot even get a click track to play along. I hope it's an easy fix and I'm just too dumb to figure it out.

Insanely quick but probably wrong answer. Are the "Mute" or "Solo" buttons pressed on the left of the track. A "Solo" track is the only one that will play. "Mute' kills one single track.

Edit > Preferences > Audio I/O > One Of Those Clickies On The Bottom.

Sometimes you need to restart Audacity to get system settings to stick.
