Automatic Timed Recording in Mono?

Hello Audacity Users,
I have been using a program I bought from Applian called "Replay A/V 8" to record a radio talk show. I have a satellite receiver wired to the line input of my sound card. I have the software setup to record from the line input 3 times per day, Monday-Friday. It records from 9:05am to 9:59am, 10:05am to 10:59am, and 11:05am to 11:59am and saves them as separate mp3 files. I get 15 mp3 files per week.
The only problem is the Replay A/V 8 software saves the files as 128kbps 44.1k stereo mp3 files. The talk show audio is mono, and I find it much easier to edit mono files with Adobe Audition. I like to see one large mono waveform instead of the smaller left and right waveforms. The Applian software doesn't have an option to save as a mono mp3 file.
I open the stereo file in Adobe Audtion, then convert to mono. It takes about 4 minutes to convert each of these long files. If the software could save the files as mono, I would save about 12 minutes per day waiting for the stereo to mono conversion.
QUESTION 1 - Does Audacity have the capability to record my 3 files per day based on the PC's clock? I need it to record as described above Monday through Friday.
QUESTION 2 - Can I save the files as 128kbps 44.1k (or 32k) sampled MONO mp3 files? I don't know if wma files can be mono, wma file types would be OK too.
If Audacity won't do this, does anyone know of software that will? I'm willing to pay if it's not shareware.
