Re: seal usb turntable
A "USB turntable" normally plugs directly into the USB socket in your computer, and a driver for the turntable or a generic USB audio driver allows the computer to input the audio directly from it.
Why would you need RCA jacks for a USB device?
If your turntable has outputs that end in RCA plugs, those should be 'extras' to allow it to be used with a conventional analog stereo, or the analog "line in" jack on a computer. Totally not necessary for a USB turntable to connect to the USB on your computer.

Re: seal usb turntable
Try enabling "software playthrough" in Audacity, that should let you hear what is being recorded.
If it doesn't--your OS and hardware might be part of the issue as well, post what they are too.
