Hi,
I was wondering if I can record guitar tracks with Audacity on my Windows laptop?
Thanks

You can do that if your laptop has a microphone or you plug a microphone into the connection (usually pink) labeled microphone.

Or go with a full-on recording system with microphone, mixer/preamp, etc.
You can't plug your electric guitar directly into most Windows laptops because the Mic-In (pink) is too sensitive -- you may cause distortion or other damage.
Electric Guitar's are hard because their signals are too powerful for Mic-In but not powerful enough for a natural Stereo-Line-In -- but you can get close. You may be able to use one of the Stereo Line-In adapters and adapt the RCA connection to your electric guitar. That would work.

The sound will be low, but easily boosted in Audacity.
