Hi

Every time I make an audacity recording and export it as an mp3
the playback mp3 ends before I have finished speaking

What can I do to fix?

Add a bit of silence to the end of the recording before you export it.
It is probably your media player cropping off the end.
Windows Media Player by any chance?
