When I try to record a 2nd track, the 1st track plays through to the 2nd.
I am using headphones, and my only input is my mic.
I see no logical reason for this to happen, and I have gone through and checked every recording setting that I could find, both within Audacity, and in the computers audio interface.
Has anyone else had this issue, and if so, how was it remedied?

It's almost always caused by recording from "Stereo-Mix" (or whatever your computer calls it) instead of Line-In or whatever real-world device you're using. This is the setting needed for recording from the internet (YouTube, etc). If you're not recording from the internet this time, those settings mess up your guitar solo.
There is no wiki to turn those settings off, and they change a lot depending on the computer, so the best we can do is follow these instructions backwards...

You are recording the performance twice, once direct and once through the "stereo mix" service.

Yep... that was the first thing that I checked. I had used the "record what was coming out of the speakers" mode to get a drum pattern from another program, then I went and changed it back to the mic for my acoustic guitar. For some reason, though, it is still picking up from "stereo mix", even though I have turned it off.

Are you recording from the microphone by accident? That will pick up everything -- badly.
Whenever Audacity 1.2 starts acting oddly, we almost always push you over to Audacity 1.3.

Audacity 1.2 is very old and no longer supported,
patched, corrected, or updated. Audacity 1.2 can
be unstable on newer computers.
Download and install the latest Audacity 1.3 from here...

You can install both audacity 1.2 and Audacity 1.3 on
the same computer, but only use one at a time.
Audacity 1.2 will not open projects made on Audacity 1.3.
If you use MP3 or some of the more modern audio
compression formats, get Lame and FFMpeg software
from the same web site. Do not use older software
or software from other web sites, even though they
may have the same names.

Then restart the computer and see if you have the same problems. Many of the elves on the forum no longer run Audacity 1.2 and will not be able to help you in that version.
