Right,
the problem is (with both stable and Beta Audacity) that I have the wrong options for my recording source. When I click on the scroll box all I get is 'Midi synth, wave CD digital, Auxillary, and "What You Hear"', when I want either 'Line in' or 'microphone'. I can i select my options given for the recording source?

I'm unsure where you are looking. If you are on Windows XP you need to set the recording input in the Windows Mixer (loudspeaker icon near the clock). If some of the inputs are missing, go into the "Options" in the Windows Mixer to make them appear in the Windows Mixer.
