audio interface for audacity

Which moderate priced audio interface should I purchase that works best with Audacity to record acoustic guitar and vocals?
Would a mixer be used just prior to the interface for more control?

That's playing into a Mac which doesn't require a stereo adapter. Windows machines generally do -- particularly laptops.

The mixer is a Peavey PV6, the adapter is a UCA202 and the microphone is a AKG 414.

Just to shortcut the process, fun though it is. I'm recording Tim in our Executive Conference Room which is soundproofed. The room is an extremely big deal when you're trying to record a live performance. Unless you luck out like I did, you will be recording the instruments, singers, walls, and ceiling. It's really easy to make a show sound like it was recorded in a bathroom and the sound is permanent.

There's nothing magic about the expensive microphone, either. That was a birthday/Christmas/Easter present. I did a very respectable voice recording recently using a $26 Radio Shack microphone. The quiet room is a Really Big Deal.
