I have Windows 2k - 1gig of ram, amd athlon 1100 mghtz processor - I shut all other applications down.

I have plenty of virtual memory, lots of hard drive space. Page file size is set right.

I open audacity, hit record, hit stop hit record again, hit stop, hit record again, screen goes black as windows reboots.

I suspect there are very few people running Win 2K on this forum to be able to offer help. The best I can suggest is that you try Audacity 1.3.4.
Sorry I can't be more helpful.

I thought that version was less stable.

Is there a big difference between win2k and XP? I thought they were pretty similar. They are both built on NT. I've heard that

win2k is the more stable, less bloated cousin of XP.

I will give the newer version of Audacity a try.

Most users find 1.3.4 to be stable (it's quite a late beta - hardly a beta at all really, just a few minor bugs, but v.1.4 is due out soon).

Win2k and XP are similar but different enough that some programs that are fine on XP are not on Win2k.
XP is a bit bloated, but nowhere near as much as Vista. I have no stability problems with XP - since SP2 came out it's been the most stable version of Windows designed for the domestic market.

Fingers crossed for Audacity 1.3.4 on Win2k - let us know how you get on.
