In Audacity 1.3.12 you can add markers (labels) during recording with Ctrl+M
If you wish to add text to the marker (label) just type the required text after pressing Ctrl+M, then press ENTER to "close" the label text.

As Steve says you can use Ctrl+M to mark the current play/record position while playing or recording.
You can also similarly place labels at a cursor position while recording or playing - by placing your cursor and then typing Ctrl+B
