Song fragmented into multiple .aup files
In attempting to transfer songs from cassette to PC, numerous .aup files were created for one song. Do settings need to be adjusted? I have not changed any defaults.

AUP files are part of Audacity Projects - they are not audio files and can not be played on other software.

I understand the need to convert to different format (MP3, WAV), but why was one song fragmented into 70+ audacity .aup files?

that is just how the data is saved to disk
to avoid assorted problems with buffering etc.
dont worry about it
audacity handles the tiny files when you open a PROJECT
to show you an entire recording on screen
FEATURE REQUEST
hide all those au files so people will stop playing with them, moving them somewhere else, etc. and causing themselves problems.
