Recording Problems

Hi guys, I'm having some issues when trying to record my keyboard(Yamaha P120) to my laptop VIA usb interface. I'm using an RCA cable(it's red and black on both ends, but I'm pretty sure it's RCA) to connect my keyboard to the line in port of my Interface, which connects to my laptop's USB port.
I have Audacity 1.2.6, and when I set everything up (playback and recording are all set to the interface), I try recording. I set the 'Audio I/O' channel setting to stereo and I play some songs, and all I get is sound detection coming through the right side. The left side shows no signs of life whatsoever. Then I try switching from Stereo to Mono, and NO sound is detected. The right side sounds perfectly fine on stereo, but I want to record my keyboard through both sides, so when I listen to it, I'm not just listening to the right ear. I read that switching to mono should fix it but my keyboard, for some reason, isn't detected on mono

I'd appreciate any helpful suggestions, and I'll do my best to communicate to see if it clarifies my problem
