How to record onto an existing track?

I'm recording myself reading a play. Every time I stop, then start recording again, Audacity creates a new track but I don't want it to do that. I want to be able to specify a track and add my recording on the end of it. The idea is that the dialogue for person A will be on track 1 and the dialogue for person B will be on track 2. The way it works at the moment means I'm ending up with dozens of tracks. Any suggestions?

Pause the recording (blue Pause button or shortcut P) which keeps it on the same track. Or use Audacity Beta which lets you append record to the selected track (hold SHIFT and click Record, use shortcut SHIFT + R).

The append record function in Audacity Beta does the job perfectly.
