Recording a vinyl LP

I have been recording my LP's to CD ( each side of the LP as one track on the CD, so it comes out as 2 big tracks containing a number of songs on the CD). I want to edit these two big tracks into mp3 or wave files of the songs they contain, cutting near the beginning and ends of the songs to cut out the record pops. I want to record in "stereo" with audacity. When I add one of the tracks to audacity I can't figure out how to edit or record. When I hit record it records silence. I want to hear what is being recorded thru my speakers not headphones.
