changing a wav file from stereo to 5.1 (number of channels)

I have some 5.1 DTS wav files, but they are marked as stereo instead of 5.1 (or 6) channel. Will Audacity modify the wav tag/metadata/whatever so that it will then be seen as a 5.1 file? I want to do this so I can mix the 5.1 channels down to stereo so that I can eventually be able to play them on an iPod, etc.
