how do I mute sound on my windows 7 pc BUT still retain good sound quality on my ongoing audacity recording ?

Most Windows machines have a speaker icon in the lower right of the desktop. Launch that and either turn it down, or use the mute button.
You are warned that if you are recording Internet Audio, that may kill your capture. Mix-Out is a complicated beast and it uses abnormal sound pathways. I ran into so many of those problems I send the headphone connection into a small "stereo" amplifier and listen that way. The room monitor volume control is outside the PC.

Brilliant Koz all I have to do is plug in my headphones and the sound is muted......solved !!
