Audacity does not have a "process menu". It's not supposed to have. What makes you think that it should?

On setting up a usb record player, the instruction book says when starting the program for the first time a box will come up to set the language this did not happen. It the sayes to change the language at any time, select the menu option "settings" in the process menu. this also has the option to "listen to new tracks during playback" if the record is to be played back simultaneously when recording. I cannot find any of this. I also cannot find a menu underneath the drive indicator as I don't seem to have a drive indicator !!!!!

I'm not surprised you're having trouble, the instructions are wrong.
The version of Audacity that you have is also probably very old.
I would normally suggest updating to the latest Audacity 1.3 beta version, but there is a known bug in this. Fortunately a version of 1.3 in which this bug has been fixed is available and you can get it from here: http://wiki.audacityteam.org/index.php? ... tly_Builds

Forget about your instruction book as it's wrong. There is a tutorial for recording vinyl here: http://wiki.audacityteam.org/index.php? ... uter_or_CD

The on-line version of the Audacity manual is here: http://manual.audacityteam.org/index.ph ... =Main_Page

When you have Audacity 1.3.11 installed you can access the manual (and also "Quick Help" which is worth reading) from the "Help" menu.
