There are several places that the recording level can be set. As well as Audacity, there are "the Mysteries of the Windows Mixer" to consider.

Well, you were certainly right.
I checked out that website and, guided by its advice, dived into my Control Panel, whereupon I found "Sounds and Audio Devices." Within that, in the Audio tab, was an option to adjust the volume for the AK5370 mic. It was down near the bottom. I slid it up to the top and it seems considerably better.
Why on earth does Windows have so many audio setting places? It's confusing.
