Changing default program association

How can I configure Audacity to save wav files to Winamp (it currently saves to Musicmatch Jukebox)?

It's not Audacity doing that. It's Windows.
Audacity will export your WAV file as a WAV file; end of story.
In Windows, your File Association seting is automatically opening WAVs in Jukebox.
To change this, in Windows Explorer, right-click on any WAV file, select 'Open With' and you should get a list of programs to choose from. You should also get a 'Choose Default Program' or 'Choose Program' option and a check box that says 'Always use the selected program to open this type of file'
