Do you mean breaking up your single long show into multiple exported songs?

Place a Label (Control-B or Apple-B) at the Beginning of each song. Then File-> Export > Multiple.

I would be exporting WAV if my collection was headed for a music CD. MP3 if I was going to post them or email them to somebody. MP3 damages everything it touches.

You don't really want MP3s - use iTunes native AAC compression format instead. Audacity can't export to AAC, but you can export as WAV and then import the WAV into iTunes as an AAC. (Size for size - and bitrate for bitrate AAC is normally reckoned to get better sound quality than MP3)
