If I try to record someone speaking from a Website, using the settings (from left to right):
Windows WASAPI; Microphone Array (Realtek high definition); 2 (Stereo) Recording Channel; Speaker/Headphone (Realtek High Def Audio)
it may work great for a few days, and then suddenly record really poorly for the next few days,
even though I’m recording the exact same voice from the exact same site!
I’ve even tried changing computers, and uninstalling Audacity and then re-installing it.
I try every possible combination of the alternatives to the above settings, and have the same problem.

Two possibilities: The data stream—web content is damaged, or something you’re doing between captures is messing up the sound pathways.
Computers don’t much like recording internet content because that’s not what they’re really doing. They’re recording Everything On The Computer, and if you have other jobs running like Skype, Chat, or Games, it’s recording those jobs or settings, too.
Make sure everything is shut down before you try your content recording. In extreme: Shift-Shutdown (not regular Shutdown or Restart), wait, and Start clean.
