Where is the advance tab in the Default format section?

Have audacity 2.00 on windows 10 and am setting up to use for the first time to import old LP’S via a Thompson turntable with USB Link, before burning them to audio CD’s
In setting up I have got MME Speakers(USB Audio control) Microphone Array(USB Audio) up on the toolbar as instructed in the getting started in the manual Is this right?
However the next instruction (2) on the advanced tab in the default format section, I cannot find where to do this ! please show me where it is.

As usual, they have included a very old version of Audacity. The current version is 2.3.0 and can be downloaded here: https://www.audacityteam.org/download/
(Audacity 2.3.1 is scheduled for release in January).

Thanks so much for your help and advice. Was given the turntable and audacity disk as a gift about 18 months ago and have not had time till now to use it. Tried it ( the old one) and could not get any play back sound. Very disappointed as the CD’s of our old LP collection are for my husband’s birthday.
