There are several MP3 export quality options, from medium to excessive. Which are you using?
What “quality” setting are you using?
…MP3 is lossy compression and it throws-away information to make a smaller file. Lower bitrates make smaller files and you generally get lower quality. (At higher bitrates MP3 can often be indistinguishable from the uncompressed original.)
And are you playing the MP3 on the same computer? Does it sound bad if you re-open it in Audacity?
If a higher quality setting doesn’t help, try WAV and tell us how that works. Maybe the problem has nothing to do with MP3…
