I record a local theater group. My recordings are usually 10 to 20 channels at once. Is there a plugin that would allow me to control the volume on each channel live. I’ve been doing it in post but it adds a lot of extra work…

Presumably there is already a mixer and you should be able to record the stereo or mono output of the mixer.

You’re currently recording multitrack with Audacity?
And you already have a multi-channel audio interface, or your mixer doubles as a multi-channel interface? Any [u]DAW application[/u] will allow you to adjust the levels during recording. (You will probably still need render a stereo or mono mix as a separate step.)
So I guess that audacity does not have a way to adjust the volume for each channel while recording…
No. Audacity will record the audio exactly as it receives it.
