I recorded audio and saved as an MP3 file. Can I go back into the file somehow and add/change tags after it has been saved?
Yes but do it with Windows Explorer (or one of the many tagging utilities available) - not Audacity.
If you do it in Audacity you will end up with a second lot of MP3 compression (for which read damaged audio).
