Is it possible to stop the recording to save it and then continue on the same track? If so, how? I am using the latest version of Audacity on Windows 7.

The only way to do it is by pressing Stop, saving the project or exporting an audio file, then Append Recording. To Append Record, hold SHIFT while pressing the Record button, or hold SHIFT and press R on your keyboard.
