Splitting dialogue down into two separate tracks

How is dialogue split down into two separate tracks please.

While I’m getting my tools in order, what did you start with? Dual channel mono? Real mono? Stereo mixed with overlapping dialog? Completed show where you want to “dig” the performers out of the final mix?

All these take different tools.

The recording came from a mobile phone conversation which I’ve converted to an mp3 format.
