Recording vinyl records separating tracks

Ok i have a Jensen turntable, Windows 10, 200 albums and I am unable to understand terminology for separating and naming tracks. :frowning: Ok I’m in my 60’s. I understand my smartphone but audacity is like rocket technology.
I can record an album in its entirety, it plays like one track. also where do I record to mp3, wav or what?
