Recording for a set period

I beg your patience for I am near an complete illiterate in understanding the terminology being used.

I am importing cassette audio to Audacity so that that I can make CD’s of public audio stuff to give away.
I am trying to import several audios to the same Audacity recording program. I know how to do this. But, I am unable how to
figure out if I can set the Audacity program to record one audio for a set time period in which the recording of the
audio import will begin & then stop after a selected time period by me. In this way I do not have to remain clued to the
computer & can go to do something else. Can someone explain it to an old man in simple terms.
