Open the Recycle Bin then , right mouse click on the accidentally binned item , then select “Restore” from the menu which appears. The item then goes back to where it was before you binned it , Audacity should then be able to see it.

If you’ve emptied the bin you’re in trouble , you could try Recuva to recover deleted items , but don’t bank on it working.
Are you actually using current Audacity 2.0.5? See the pink panel at the top of the page.
For me (Windows 8.1, Audacity 2.0.6) Audacity does not freeze if I delete an AUP file that is open in Audacity, and I would not expect it to. If I edit the project, Audacity is writing the unsaved changes to the AUTOSAVE file (it’s a temporary AUP file, in effect).
If I save the project, Audacity recreates the AUP file.
If the project contains a WAV file that I imported without copying it in, deleting the AUP is still not a problem.
Or do you mean you sent the _data folder to the Recycle Bin? In that case, Trebor’s advice should work.
